Salt and pepper
Preheat oven to 400°F.
Brush chicken with olive oil and season with salt and pepper.
Place chicken breast side up on the rack of a roasting pan and fill the pan with 1/4 inch of water.
Roast for 1 hour and 15 minutes or until the minimum temperature of 165°F is reached in the thickest part of the thigh. Serves 4.
