BBQ Chicken & Country Cabbage Slaw Sandwich
4 cups shredded green and red cabbage
1 cup shredded carrots
1/4 cup chopped chives
1 Tbsp. chopped dill
1/4 cup mayo
1 Tbsp. red wine vinegar
salt and pepper to taste
4 boneless, skinless FreeBird chicken thighs, grilled
1/2 cup BBQ sauce
Combine cabbage, carrots, chives and dill in a mixing bowl. Dress with mayo and vinegar and season to taste with salt and pepper. Set aside.
Fill roll with chicken topped with BBQ sauce and a scoop of slaw. Serve extra slaw on the side. Serves 4.
